Radish leaves
Radish is a vegetable known for its slightly spicy flavor and beneficial nutritional properties. In addition to the root, radish leaves are also edible and rich in nutrients that are often underestimated. They contain potassium, which is useful for blood pressure regulation, and other minerals, such as phosphorus, iron, and magnesium. They are also a source of vitamin C, which boosts the immune system.
Semolina dumplings with radish leaves
Few ingredients for a super tasty and waste-free dish. Follow the recipe to make semolina dumplings with radish leaves.
Ingredients:
- 250 g. semolina
- 200 g. of radish leaves
- 200 g. grated cheese
- 1 liter of milk
- 2 eggs
- 50 g. butter
- Salt to taste.
- Nutmeg to taste.
Preparation:
- Wash the radish leaves and boil them in salted water. When they are ready, after squeezing them well, chop them finely.
- Boil the milk with grated nutmeg and salt. Pour in the semolina and stir with a whisk, preventing lumps from forming, and cook until the mixture is well thickened.
- Remove the pot from the heat and cream with butter.
- Pour the mixture into a bowl add chopped radish leaves, the eggs and 150 g. grated cheese and mix.
- Grease a baking sheet and transfer the mixture, leveling it until it is about 1 centimeter thick.
- When cooled with the help of a round pastry cup or glass, cut out the gnocchi alla romana and arrange them in a buttered baking dish, covering with the remaining grated cheese.
- Bake the gnocchi alla romana in a preheated oven at 200° for 15 minutes and finish with 5 minutes of grilling at maximum power.
