Potato peels

Versatile and nutritious, potatoes offer much more than meets the eye! In addition to the flesh, the skin is also a valuable resource rich in fiber, vitamins, and minerals, such as potassium and iron.

Due to their composition, potatoes are allies for health: they provide lasting energy through complex carbohydrates and support heart and muscles with their potassium content. In addition, consuming them with their skins on helps improve digestion and reduce waste.

Stuffed potato boats

Here is a simple and tasty recipe for preparing a tasty side dish

Ingredients for 4 people:

  • Peels of 4 large potatoes (well washed)
  • 50 g of grated cheese (parmesan or pecorino)
  • 180 g of provolone cheese
  • 150 g diced speck
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste.
  • Herbs to taste (rosemary or thyme)

Preparation:

  1. Preheat the oven to 180°C. In the meantime, wash the potatoes well and cut them horizontally without removing the skin, so you get little boats.
  2. Grease both sides of the boats with a drizzle of oil and place them belly down on a baking sheet lined with parchment paper.
  3. Bake and cook for about 8 to 10 minutes. Then turn the potatoes over and continue cooking for another 10 minutes, until soft.
  4. Once cooked, gently empty the potatoes with a spoon, being careful not to break the skins.
  5. In a bowl, mash the potato flesh with a fork and mix it with the cubes of provolone and speck, salt and pepper.
  6. Fill the potato skins with the mixture you have prepared, sprinkle with grated cheese, and return the boats to the oven for another 8 minutes, until the filling is hot and stringy.

Fried potato skins

Alternatively, you can make a tasty snack and recover potato peels.

Ingredients:

  • Raw potato peels
  • Extra virgin olive oil b.
  • Salt to taste.
  • Pepper to taste.
  • Aromatic herbs to taste.

Preparation:

  1. Turn on the oven to 180°.
  2. Wash the potatoes well, cut off the skins, and arrange them on a baking sheet.
  3. Season the peels with salt, pepper and a drizzle of oil. You can also add a mix of herbs if you like.
  4. Bake for about 10 minutes, until crispy.
