Zero waste in the kitchen: potato peels

In this new installment of Zero Waste in the Kitchen we discover how to give new life to the potato peels, transforming them from a simple waste to a star ingredient in a tasty and anti-waste recipe. As is often the case, the parts considered “less noble” parts of vegetables are actually rich in nutrients and perfect for salvaging in the kitchen.

Potatoes and their skins

Potatoes are a simple and versatile ingredient that form the basis of many preparations. Even their skins, which are often discarded, contain mineral salts and nutrients that make them ideal for flavorful and creative recipes. Using them in the kitchen means reducing food waste and making the most of this common vegetable.

Potato pie with peel

An easy and hearty recipe, perfect as a one-pot meal, appetizer or for a casual lunch.

Ingredients

  • 300 g. potatoes
  • 150 g. vegetable cream
  • 2 rolls of puff pastry
  • salt to taste
  • pepper to taste
  • grated cheese to taste.
  • Yolk of one egg, or milk to taste. (for brushing on the savory cake)
  • water

Proceedings

  • Cook the potatoes
    Wash the potatoes thoroughly without removing the skin. Cut them into cubes and cook them in approx. ½ liter of salt water until they are soft.

  • Prepare the stuffing
    Drain the potatoes and transfer them to a large bowl. Mash them with a fork until coarse in texture.
    Add the vegetable cream, the grated cheese, halls e pepper to taste, then mix well until creamy and smooth.

  • Assemble the savory pie
    Stretch the first roll of puff pastry In a baking dish lined with baking paper. Pour in the potato filling and spread it evenly.
    Cover with the second puff pastry roll, seal the edges well and pokes holes in the surface With a fork.

  • Brush and bake
    Brush the surface with beaten egg yolk or with milk.
    Bake in a preheated oven at 190°C for 35-40 minutes, until golden brown.

  • Servants
    Bake the savory cake and leave it warm before cutting and serving.
