Broccoli Stalk Chips: A Zero Waste Snack

Welcome to a new edition of our Zero Waste in the Kitchen column!
Today we transform the broccoli stalks, often discarded, in crispy and nutritious chips.

With this recipe you will learn how to enhance an often overlooked part of broccoli, creating a tasty snack, light and sustainable, ideal to serve as an appetizer or side dish.

Broccoli stalks:

Broccoli, it is known, is Among the healthiest foods due to the presence of fiber, vitamins and antioxidants. Specifically, within their stalks are numerous nutritional properties!
And that is why one should not stop at just the tops. Sulfur and several enzymes are concentrated in the stems, substances that play an important role in cancer prevention.
Broccoli stems also contain high amounts of protein, calcium, iron, magnesium, potassium and sodium. A mix of strength and well-being. Among the vitamins they offer, in addition, vitamins A and C stand out in particular, which are excellent for the care of one's skin.
In short, a real source for health!

Broccoli stalk chips:

Ingredients:

  • 1 stalk of broccoli
  • 20 g of rice flour
  • 1 teaspoon dried oregano
  • 1 teaspoon curry
  • Extra virgin olive oil q.b.

Preparation:

  1. Clean the stem, removing the tough outer part, and cut it into thin rounds of 1-2 mm.

  2. Pour a drizzle of extra virgin olive oil over the washers.

  3. In a dish mix rice flour with oregano and curry.

  4. Dip the rounds in the flavored flour and lay them on a baking sheet lined with parchment paper, pouring in another drizzle of oil.

  5. Bake in a preheated oven at 200°C for 15-20 minutes, or fry in hot oil. Alternatively, you can use an air fryer at 180°C for 15 minutes, until golden brown.

  6. Serve the chips hot as fancy appetizer or crispy side dish.

Tip: You can also use the same technique with other stems or vegetable scraps to create ever-changing anti-waste snacks: such as the potatoes, the zucchini, the Savoy cabbage leaves.
