Rocket tuna and potatoes balls

  • 1 package of Wild rocket of 80 g.
  • 140 g. of tuna
  • 2 small eggs 
  • 40 g. bread crumbs
  • 80 g. parmesan cheese
  • 3 medium sized potatoes
  • salt to taste
  • pepper to taste
  • parsley to taste

Looking for a delicious recipe? These meatballs of Wild rockettuna and potatoes are perfect for an aperitif or as a second course.

  1. Boil the potatoes in a pot with plenty of salted water.
  2. Meanwhile cook the RRocket in a pan with a tablespoon of oil and a little water. After about 10 minutes remove the pan from the heat and cut the arugula using a knife or scissors.
  3. Once cooked, peel and peel the potatoes. Transfer them to a bowl andadd the chopped rocket, drained tuna, a large egg or two small eggs, cheese, breadcrumbs, parsley, salt and pepper and mix until smooth.
  4. Crush all the ingredients with a fork until smooth.
  5. Form the meatballs with the palm of your hands, then pass them in the breadcrumbs and fry them in plenty of peanut oil, or in the air fryer at 180 degrees for 10 minutes.
  6. Drain the meatballs with a perforated ladle and let them dry on kitchen paper. Serve lukewarm and bon appetit!
