Goat balls with bean pod cream: Zero waste recipe

Today we value the broad bean pods, often discarded but rich in Fiber, chlorophyll, antioxidants and minerals.

With this recipe you will learn how to turn pods into a tasty cream to stuff soft goat cheese balls, reducing waste and creating a healthy and surprising spring appetizer.

Nutritional benefits of fava bean pods

Le broad beans are a concentrate of plant proteins, fibers e minerals such as iron, magnesium and potassium. Excellent for intestinal well-being and cholesterol control, they also contain B vitamins, useful for the nervous system and energy production.

Often discarded, the pods are actually rich in fiber, chlorophyll e antioxidants. If well cleaned and cooked, they can be made into tasty creams and fillings, perfect for reducing waste and enhancing the whole ingredient. A sustainable and smart gesture in the kitchen.

A simple and creative recipe that combines taste and sustainability: soft goat cheese bonbons, crispy on the outside and creamy inside, with a heart of fava bean pods. Ideal as an appetizer or spring finger food.

Ingredients

  • 400g of fresh goat cheese

  • 150g of broad bean pods (already cleaned)

  • 1 tablespoon of potato starch

  • 1 tablespoon of extra virgin olive oil

  • Mixed seeds: poppy, pumpkin, sesame

  • Salt and pepper q.b.

Preparation

  1. Clean and blanch the pods
    Wash the pods well, remove any strings and cut them into pieces.
    Blanch them in lightly salted water for 5-7 minutes, then drain and let them cool.

  2. Prepare the cream of pods
    Blend the pods with the oil, salt, pepper, and starch until thick and smooth.
    If you wish, pass it through a sieve to make it even finer.

  3. Shape the goat cheese balls
    Take a small amount of goat cheese, crush it in the palm of your hand, add a teaspoon of the creamy pods in the center and close forming a ball.

  4. Decorating the spheres
    Roll the bonbons in the mixed seeds, alternating flavors for a decorative effect.

  5. Conservation
    Keep the balls in the refrigerator for at least 30 minutes before serving.

💡 Suggestion: these goat cheese balls can be served as an appetizer or finger food, and the creamy pods can also be used to stuff crostini or canapés.
