Zero Waste: fava bean pods

Welcome to the 31st edition of our column #ZeroSprechiincucina, created to transform waste into valuable ingredients for new recipes. We often throw away parts of vegetables that, instead, can be recovered and enhanced in the kitchen, helping us to reduce food waste. The less-used parts of vegetables are in fact rich in fiber, vitamins and minerals that are essential for our well-being.

Broad bean pods

Le broad beans are a concentrate of plant proteins, fibers e minerals such as iron, magnesium and potassium. Excellent for intestinal well-being and cholesterol control, they also contain B vitamins, useful for the nervous system and energy production.

Often discarded, the pods are actually rich in fiber, chlorophyll e antioxidants. If well cleaned and cooked, they can be made into tasty creams and fillings, perfect for reducing waste and enhancing the whole ingredient. A sustainable and smart gesture in the kitchen.

Goat cheese balls filled with creamy pods

A simple and creative recipe that combines taste and sustainability: soft goat cheese bonbons, crispy on the outside and creamy inside, with a heart of fava bean pods. Ideal as an appetizer or spring finger food.

Ingredients

  • 400g of fresh goat cheese

  • 150g of broad bean pods (already cleaned)

  • 1 tablespoon of potato starch

  • 1 tablespoon of extra virgin olive oil

  • Mixed seeds: poppy, pumpkin, sesame

  • Salt and pepper q.b.

Preparation

  1. Wash the broad bean pods well, remove any strings and cut them into small pieces. Blanch them in lightly salted water for 5-7 minutes, then drain and let them cool.
  2. Blend the pods with a tablespoon of oil, a pinch of salt and pepper, and the starch. A thick, smooth cream should result. Strain through a sieve if necessary for fineness.
  3. Take a small amount of goat cheese, crush it in the palm of your hand, put some of the creamy pods in the center and close forming a ball
  4. Roll the bonbons in the mixed seeds, alternating flavors for a decorative effect.
  5. Keep refrigerated for at least 30 minutes before serving.
