Sweet fritters with velvety Mantuan pumpkin soup

  • 1 package of Mantuan Pumpkin Velouté 350 g.
  • 2 eggs
  • 320 g. flour
  • 180 g. sugar
  • 8 g. vanilla baking powder
  • 40 g. potato starch
  • Orange peel
  • Icing sugar
  • Peanut Seed Oil

PROCEDURE

Here's how to make delicious sweet pancakes with the Mantuan Pumpkin Velouté:

  1. Pour the eggs, sugar, and orange zest into a bowl. Mix all ingredients with an electric beater, or whisk.
  2. Add the Mantuan Pumpkin Velouté. Sift the flour and baking powder so that no lumps form and mix.
  3. Pour seed oil into a pan and bring it to 175 degrees.
  4. Using two spoons, pour the mixture into the oil and fry the pancakes, which will swell on contact with the hot oil.
  5. Drain the pancakes in a bowl with paper towels to remove excess oil.
  6. Serve the pancakes hot and dust them with powdered sugar.
