Cuddura with Mantuan squash velouté

  • 1 package of Mantuan squash velouté 350 g.
  • 1 kg. 00 flour
  • 250 sugar
  • 4 eggs
  • 130 g. butter
  • 8 g. baking powder
  • zest of 1 lemon

 

For decoration

  • 12 eggs
  • colored sprinkles

PROCEDURE

Cuddura are typical Easter sweets. In this recipe the Mantuan Pumpkin Velouté adds an extra touch of sweetness and flavor to the dough.

  • Pour the eggs, sugar, zest of one lemon into a bowl and mix.
  • Combine the Mantuan Pumpkin Velouté and mix.
  • Add room temperature butter, baking powder and sifted flour. Mix all ingredients together with a whisk.
  • Transfer the dough to the work surface and knead it until it is soft but not sticky. Place it back in the refrigerator for half an hour.
  • Take the dough again and divide it into smaller parts. Create strands of the same length and form the braid, then close it in a circle.
  • Add the hard-boiled egg to the center and block it with two strips of dough. Brush with egg and top with sprinkles.
  • Bake in the oven at 200° for 20/25 minutes
  • When cooked, bake and let them cool.
